Dawn Pennington

Dawn Pennington, the founder of Penningtons School of Cake Artistry, first started her training at the prestigious Mary Fords Cake Artistry Centre, Southbourne, where she completed a full apprenticeship in confectionery and cake decoration training under Mary Ford and the ever respected master of royal icing Eddie Spence MBE. Dawn also produced 3 cake decorating books with Mary Ford which were the first teaching books of their kind helping to increase the popularity of sugar craft. During her cake decorating career Dawn entered numerous competitions winning many Golds and also contributing to the table of honour, which is by invitation only. Having decided teaching was where her heart lay, Dawn started her career in teaching at Bournemouth and Poole College over 20 years ago where she has helped build the sugar craft department to a centre of excellence. In 2010 Dawn started Pennington's School of Cake Artistry, which is going from strength to strength.

Lesley Rathbone

With a background in Cake Decoration and Floral Sugarcraft going back over 30 years, Lesley knows a bit about her subject! Over the years she has been involved in the British Sugarcraft Guild as a group chairman, taken part in numerous competitions at National Level and had her fair share of successes. Lesley taught for years at Poole Adult Learning and Bournemouth & Poole College, where she worked alongside Dawn, before branching out on her own and running weekly classes across the area for 5 years. In 2010 She re-joined forces with Dawn at her newly formed Cake School and ... the rest is history!! Her love of Floral Sugarcraft, (the making of life-like wired sugar flowers), has led her to specialise in this addictive artform. Lesley's classes are aimed at any ability and she hopes to awake and inspire the same feelings in those wishing to learn it, as she feels for it still.

Angela Ford

When Angela moved to Bournemouth in 1994 she started her career as a student in cake artistry at Bournemouth & Poole College under the instruction of Dawn. She soon became hooked and loved the art of Royal Icing, admiring the work of legends such as Eddie Spence and Mary Ford, and aspired to be at their level. She decided to take her learning seriously and became qualified in cake artistry to advanced level achieving distinction in 2002. During that period she also entered several National Cake Decoration and Sugarcraft competitions in the Royal Icing and Sugarpaste classes, never achieving less than Gold. In 2013, having retired from accountancy, Dawn offered her a position working alongside her at Penningtons. She is now teaching Royal Icing classes which have always remained her passion and first love. She also assists Dawn with sugar paste & modelling classes where she hopes our enthusiasm for sugar art is contagious for all our students.

Kerry McFarlane

Kerry started her love for cake artistry 10 years ago, by doing cakes for family and friends. She quickly found that this stimulated her creative side and led her to decide, in 2008, to take it a little more seriously and went to Bournemouth & Poole College. There she started to do evening classes with Dawn, which led to a qualification in cake decoration which she passed with distinction. During this time she started her own cake business from home “Kerrys Cakes”, enjoying enormously all the challenges creating bespoke cakes.   Then in 2014 she started teaching at Penningtons, working alongside Lesley Rathbone (sugar flower specialist) assisting with the wired flower classes. Since then, she is now also teaching carved, novelty, and cupcake courses. She hopes to pass on her learnt skills and share her love and passion for cake artistry to our students. 

Ginny Phillips

 

 

 

 

Ginny achieved Distinction in Advanced level courses in Sugarcraft and Gold Awards for competition cakes trained under Dawn Pennington and Lesley Rathbone at Bournemouth & Poole College. She continued to run a successful cake business from home offering bespoke cakes and biscuits. In 2011 Ginny qualified as a teacher in Further Education and taught at Bournemouth & Poole College in the Sugarcraft department teaching accredited courses following on from Dawn. She also became a Moderator for ABC examination Board where she continues to encourage a wide variety of Sugarcraft students visiting many colleges up and down the country.

Keen to keep abreast of new trends in the World of Cake Decorating , Ginny has used her artistic background of painting illustrations in children's books to the art of painting on cakes, which can give a stunning new dimension to occasion cakes.
